The return of the lentil

Thomas Keller uses a lot more diced onion, plus chives in his Bouchon lentil salad - but my testers found it a bit much.
The French lentil is quite possibly my favorite legume. It doesn’t require soaking or fiddling to cook up nicely, and it holds it shape instead of dissolving as you stir.
